500g TRUEfoods Kombu Dashi
150g cooked ramen noodles
100g Beef rump or left over roast beef
50g Asian mushrooms (Oyster, shiitake or enoki)
10g Dark soy
1 spring onion thinly sliced
1 green chilli thinly sliced
1 red chilli thinly sliced
1 pak choi sliced
2g sushi ginger
2 boiled eggs
1. Add the kombu dashi, soy sauce and torn mushrooms to a pan and bring to the simmer.
2. Add the noodles, beef strips and diced tofu and lightly poach,
3. Add spring onion, chillies, pak choi.
4. Serve in a bowl and garnish with ¼ cut boiled eggs and chopped sushi ginger and coriander.
