Ingredients
500g TRUEfoods Fragrant Thai Broth
100g Creamed Coconut
100g Chicken breast or left over roast chicken
100g Asian greens; Pak choi, tender stem broccoli, mangetout
10g Spring onions (sliced)
5g Fresh coriander (coarsely chopped)
5g Ginger (finely diced)
3g Green chilli (finely sliced)
Method
Empty the Fragrant Thai Broth into a pan with the coconut cream and bring to a simmer. Add the strips of chicken breast or left-over chicken and Asian greens, poach gently until cooked. Finish with sliced spring onions and coarsely chopped coriander and serve with steamed rice in a warmed bowl.
