500g TRUEfoods Vegetable or chicken stock
200g peeled then sliced Jerusalem artichokes
100g sliced white onions
10g Garlic puree
40g whipping cream
40g Crème fraiche
1, Slowly sauté the sliced onion and garlic in butter till tender and sweet.
2, Add the peeled and sliced artichokes, stock, cream and salt. Then simmer gently till the artichokes are tender.
3, Add the crème fraîche and blend till smooth.
4, Serve and garnish with artichoke baked crisps and chives if you wish.
