Ingredients
500g TRUEfoods Kombu Dashi
100g Cooked ramen or egg noodles
50g Sliced chicken breast or left over roast chicken
(for a vegetarian option omit the chicken and add more vegetables of choice)
50g Asian greens; pak choi, tender stem broccoli, mangetout (slice)
20g Carrot strips (thinly sliced)
10g Spring onions (thinly sliced)
10g Red onions (thinly sliced)
2g Fresh coriander (roughly chopped)
Method
Add the Kombu Dashi and chicken to a pan and bring to a simmer. Add mushrooms, Asian greens and red onions and carrots and simmer for 2 minutes. Add the cooked noodles spring onions serve in a warmed bowl. Finish serving top with the roughly chopped coriander.
