Chinese Chicken & Mushroom Noodle Soup

500g TRUEfoods Light Chinese Broth
150g Sliced chicken breast or left over roast chicken
150g Cooked wheat noodles
50g Asian mushrooms; Oyster, Shiitake, Enoki (sliced)
30g Baby corn (sliced)
20g Carrot (strips)
20g Spring onions (sliced)
10g Dark soy sauce
5g Lime juice
5g Sesame oil (optional)


Pour the Light Chinese Broth into a pan with the sliced Asian mushrooms and chicken and bring to a simmer. Add the sliced baby corn, carrot strips and soy sauce and continue to simmer for two minutes. Add the cooked noodles, sliced spring onions and lime juice. When noodles are warmed through add to a warmed bowl or mug, and drizzle sesame oil on top.
